Foodie Fridays: Bacon Jalapeno Apricots

Two reasons for these-- 1) A co-worker purchased a ready made version of these at a local gourmet shop and I couldn't stop eating them.  Seriously, when you can't stop thinking about the food you KNOW its good...and its so simple! Bacon, Jalapenos, and a dried Apricot, easy peasy, and terrific for gatherings.  2)  I love, love, loved this combination from our Jalepeno Popper grilled cheese so this is a must try in my book.



Bacon Jalapeno Apricot Bites

16 dried apricot halves, cut lengthwise
2 fresh jalapenos, seeded and cut into thin strips (you can also use pablanos if you don't want the heat of jalapenos)
2 pieces, low sodium bacon, cut each piece in half lengthwise and then cut again horizontally

Preheat oven to 325 degrees.
Place one thin slice of jalapeno on top of apricot half.
Wrap apricot half with one strip of bacon with toothpick. Repeat procedure for remaining 15 apricots.
Bake on cookie sheet with cooling rack to allow grease to drain, for approximately 12 minutes. Turn apricot halves over to allow browning on reverse side for another 10 minutes or until desired crispiness.  When done, remove apricots from pan and place on paper towel to drain.
